In honor of Covenant Heath System’s 10th Anniversary, the Covenant Foundation cordially invites you to enjoy “Tango on the Llano – An Evening in Buenos Aires”. The Covenant Foundation offers you an evening of fine dining, dancing and entertainment that will evoke this gracious and exciting metropolis of South America.

Menu Fiesta de Argentina
Bocaditos
Empanadas with Pulled Pork With a Roasted Yellow Bell Pepper Coulis Sauce garnished with Cilantro Plushes.
Ensaladas
Mesclun Mix, Cherry Tomato, Cucumber, Bells, Carrots, Corn, Jicama, Manchego Cheese tossed in a quince Vinaigrette.
Mariscos
Grilled wild caught shrimp with Chunky Tomato Marinara Sauce over a Seared Polenta Cake garnished with a whole Basil Leave & Shredded Parmesan Cheese.
Platos Del Sena
Ribeye Steak with Chimchurri Sauce served with roasted Gold and Butternut Squash and a Vegetable Skew of Eggplant, Zucchini, Red Bell, and Onion.

Dulce de Leches drizzled on plate with Sweet Potato Cheesecake
